Traditional Rathasali Rice Lemon Rice Recipe

Ingredients

  • 1 cup Rigel Spices Rathasali Rice

  • 3 cups water

  • 2 tbsp fresh lemon juice

  • 2 tbsp cooking oil

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 tbsp peanuts

  • 8–10 cashews, optional

  • 1–2 green chillies, slit

  • 1 dried red chilli

  • 8–10 curry leaves

  • ½ tsp turmeric powder

  • A pinch of asafoetida

  • Salt to taste

  • Fresh coriander leaves for garnish

Preparation Method

Step 1 – Wash & Soak the Rice

Wash the Rathasali Rice thoroughly and soak it for 4–6 hours. Soaking helps the rice cook more evenly and improves its texture.

Step 2 – Cook the Rice

Drain the soaked rice and add it to a pressure cooker or heavy-bottomed pot with water. Cook until the rice becomes tender. Allow it to cool slightly and gently separate the grains.

Step 3 – Prepare the Tempering

Heat oil in a pan and add mustard seeds and cumin seeds. Once they begin to splutter, add peanuts, cashews, green chillies, dried red chilli, and curry leaves.

Add turmeric powder and a pinch of asafoetida to the tempering. Stir gently for a few seconds, keeping the heat low.
