Kullakar Red Rice Pulao – A Healthy Traditional South Indian Rice Recipe
Kullakar red rice is a heritage rice variety from South India known for its rich nutrients, earthy taste, and high fiber content. Unlike polished white rice, this traditional grain retains natural minerals and antioxidants, making it ideal for healthy meals.
This Kullakar red rice pulao is a simple yet flavorful dish prepared with aromatic spices, vegetables, and wholesome rice. It works perfectly as a nutritious lunch, dinner, or festive meal option.
Ingredients
-
1 cup Kullakar red rice
-
2 cups water
-
2 tablespoons oil or ghee
-
1 onion, thinly sliced
-
1-inch ginger, minced
-
3–4 garlic cloves, minced
-
1 green chili, sliced
-
1 small capsicum, sliced
-
1 carrot, sliced
-
1 teaspoon cumin seeds
-
1 teaspoon coriander powder
-
½ teaspoon turmeric powder
-
Salt to taste
-
¼ cup frozen peas (optional)
-
Fresh coriander leaves for garnish
Preparation Method
Rinse the Kullakar red rice thoroughly and soak it in water for about 30 minutes. This helps the rice cook evenly and become soft.
Bring water to a boil in a pot. Drain the soaked rice, add it to the boiling water with a pinch of salt, cover, and cook on low heat for 20–25 minutes until tender.
Meanwhile, heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter. Add sliced onions and sauté until golden brown.
Stir in ginger, garlic, green chili, capsicum, and carrot. Cook for a few minutes until the vegetables soften slightly. Add coriander powder, turmeric powder, and salt, and sauté until aromatic.
Add the cooked Kullakar red rice and peas (if using). Mix gently so the grains remain separate. Let it cook for a few minutes so the flavors blend well.
Garnish with fresh coriander leaves and serve hot as a wholesome main dish or a nutritious side.
Electric Rice Cooker Method
Wash the Kullakar red rice well and cook it in a rice cooker with sufficient water for about 25 minutes, depending on the texture required. Once cooked, mix it with sautéed vegetables and spices to prepare quick pulao.
Health Benefits of Kullakar Red Rice
Kullakar rice is rich in fiber, iron, and antioxidants that support digestion and overall wellness. Compared to refined rice, it releases energy slowly, making it suitable for balanced diets and traditional healthy cooking.
