  • Ghee – 1 tbsp

Preparation Method

Step 1: Soak the Rice

First, wash the Kattuyanam rice thoroughly and soak it in water for about 4 hours. This helps soften the rice and makes it easier to grind.

Step 2: Dry the Rice

After soaking, drain the water and spread the rice on a clean white cloth. Allow it to dry under a fan for 15–20 minutes until the moisture reduces slightly.

Step 3: Prepare Jaggery Syrup

Take a pan and add 1 cup of jaggery with a little water. Heat it and stir continuously until the jaggery completely dissolves. Strain the syrup into a clean bowl to remove impurities.

Step 4: Grind the Rice

Grind the semi-dried rice into a coarse flour. This flour forms the base for the Kozhukattai dough.

Step 5: Prepare the Dough

Slowly add the jaggery syrup into the rice flour and mix it well with your hand. Add grated coconut, cardamom powder, and a pinch of salt. Mix everything together until a soft dough forms.
