-
¼ cup Moong Dal

How to Prepare Karuppu Kavuni Rice Sweet Pongal
Step 1 – Soak the Rice
Wash the Karuppu Kavuni rice thoroughly and soak it in water for about 30 minutes. This helps soften the rice and reduces cooking time.
Step 2 – Roast the Rice
Drain the soaked rice and dry roast it on a low flame for 15–20 minutes. While roasting, the rice will slightly pop or puff, which enhances the flavor.
Step 3 – Break the Rice
Allow the roasted rice to cool for about 10 minutes. Then lightly grind it in a mixer to break the grains slightly. Do not grind it into a fine powder.
Step 4 – Cook the Rice and Dal
Add the broken rice and moong dal into a pressure cooker. Add enough water and cook for 4–5 whistles until the rice becomes soft.
Step 5 – Mash and Boil
Once the pressure is released, gently mash the cooked rice mixture with a ladle. Place it again on medium flame and allow it to simmer.
Step 6 – Add Sweetness and Flavor
Add nattu sakkarai and cardamom powder to the mixture and stir well until the sugar melts and blends perfectly.
Step 7 – Add Coconut Milk
Pour in the coconut milk and mix gently. Allow it to cook for a few minutes until the mixture becomes thick and creamy.
Step 8 – Garnish
Heat a little ghee, fry cashew nuts and raisins, and add them to the pongal for a rich taste and aroma.
